A spokesman for A2A Consulting, Chartered Surveyors, which represent Jamal Uddin on property matters, said: “Mr Uddin is very disappointed that this prosecution has been brought, particularly given his prompt response to the requirements of council officers and the considerable investment he has made in the food storage and preparation facilities.
“Our client has operated a very popular restaurant from these premises, serving local people and visitors and sponsoring sports teams in the community, for many years, and he fully accepts the need to maintain the highest standards of food hygiene at all times.”
He added: “To supplement the building improvements already carried out, further staff training and additional procedures have been introduced.
“Mr Uddin is considering an appeal against the level of the fines imposed which he considers disproportionate to the offences found against him.”
