Based at the Town Bridge end of St Thomas Street, the new restaurant with its American-themed menu is the third 'Funkin' instalment after the brand's first eatery in South Street, Dorchester and Funkin Desserts, also in St Thomas Street.
According to co-owers Andy Phillips and Aaron Bradder, the new Weymouth restaurant will provide the town centre with an injection of 'vibrancy'.

Mr Phillips said: "We'll be serving unique, quality food at a fast pace.
"The St Thomas Street eatery will provide a vibrant, lounge-esque style, where customers can relax and enjoy themselves while they eat and drink.
"Currently we have 10 staff for the new restaurant, but we're looking to take on more than 20 in total."
The restaurant's wooden interior design is made completely out of recycled materials, which is complemented by the bio-degradable packaging.
Unlike the Dorchester site, the Weymouth restaurant will serve alcohol after the duo signed a contract with Italy brewery Peroni.
"Once restrictions are lifted on July 19, the new restaurant's capacity is 40 people," said Mr Bradder.
"As well as the food, we'll be serving unique desserts, and our menu will change every three months with additional specials.
"We're just completing the finishing touches for the new bar area.
"We're currently in contact with local butchers to source our meat - and we also provide vegan options."
To keep to the American style, the restaurant will serve a variety of floats and there is a free-to-use Street Fighter arcade machine with plans to install a Pac Man one too.
Since the opening of the first site in Dorchester on March 26, which has 12 staff, the Funkin enterprise is set to offer more than 30 jobs across its three sites.
Mr Bradder added: "It's been a huge investment but we're excited to get started and show Weymouth everything we have on offer."
Once up and running ,the two business partners said they will turn their attention to launching more restaurants in Bournemouth, Poole and Southampton.
The restaurant, which was the site of Emporium Tattoos, is open from 12pm until 11pm.
